With a series like Star Wars, things either happened or they didn't happen. It all depends on what you want to believe. So in this way, everything is cannon and nothing is cannon.

It turns out all the movies were Jack telling them the story of his life and they don't believe a word of what crazy old Grandpa Jack says. Which is why whenever they make the last movie (hopefully many sequels from now), I'd like to see it end with an old Captain Jack in a rocking chair telling the story of his life to his grandkids. It makes it easier to take in new, sometimes contradictory information, and kinda puts the movies on a meta-level that's fun. So I choose to take everything we see or hear with a grain of salt, as if to say this is one version of the story, there could be many things that didn't actually happen the way they said it did, or it could be completely made up altogether. (Think Paul Bunyon or John Henry.) Similar to the story of how Jack got off Rumrunner's Island, everyone has their own version of what they had heard happened, the story getting more crazy each time it's told. Legends have a kernel of truth to them and then often times they skew off into incredible and unbelievable tangents. The thing about POTC that is unique (and one of the reasons it's in my top 5 fav movie series of all time) is that it's a story based on Legends. This approach keeps me from being too upset if something onscreen contradicts something in a random book that the vast majority of people, even fans of the series, won't spend the time to read. Everything else I can choose to add to my own personal head cannon if I want to, but it's not required to accept everything.

When it comes to a movie series like this that has many spinoff books, comics, whatever, I always come at it with the mindset of whatever is shown onscreen is the only 'official' cannon.
